Are you looking for a whole bean coffee that can transport you far from everyday life? The Lugat coffees unveil their new creation: Castillo Vanilla Fudge, a specialty coffee with dark roast and 100% arabica, with intense and indulgent aromas. It is a coffee meticulously crafted from the varieties Caturra and Castillo, combining smoothness and aromatic richness.
Let yourself be carried away and step into South America, in the Quindio region at Calarcà, recognized for its volcanic terroir and cool climate, conducive to the maturation of cherries. More specifically those from Finca La Milàn, led by Julio Cesar Madrid, which extends over 200 hectares and rises to 1400 m altitude.
His approach combines tradition, commitment and innovation, contributing to making him a reference in specialty coffee in Colombia and internationally. A third-generation producer, he updates tradition while respecting the environment, favoring hand picking to keep only perfectly ripe cherries, and introducing new fermentation methods.
Julio Cesar Madrid operates three family farms, gathered under the banner of Café Uba, with the vocation to transmit his know-how to future generations and experiment with new fermentation protocols.The co-fermentation allows to sculpt the aromatic profile of the coffee and obtain cups with original and complex aromas. By incorporating fruits, spices or yeasts during fermentation, the producer activates biochemical reactions between the beans and these inputs. This technique does not aim to flavor the coffee, but to reveal and intensify certain notes, thus providing a unique sensory experience and allowing the exploration of new aromatic profiles.
This process takes place in several phases: the beans first undergo oxidation in open air, then are transferred to a sealed tank for careful control. Combined with macerated pineapple, unrefined cane sugar, natural vanilla, and carefully selected yeasts, they remain 48 hours in this enclosure, converting sugars and revealing a gourmet aromatic profile with complex scents.
This Lugat whole bean coffee, roasted in France by our master roasters with a freshness of less than 30 days, expresses its full potential with your manual machine. During optimal extraction (extraction time - 27 seconds, output weight - 41 g, input weight - 18.5 g), the coffee unfolds all its indulgence and vanilla notes, with a medium body, hints of strawberry, and a smooth, lingering finish.
Generally, in the cup, the Castillo Vanilla Fudge reveals on the nose pastry and floral notes, followed by a tender and sweet entry on the palate, supported by aromas of candied fruits and peach. Its medium body reveals hints of nougat and vanilla, with a delicate finish on milk chocolate. A gourmet cup that your taste buds will fully appreciate.
