Even if the fineness and consistency of the grind are the fundamental factors for making a good espresso, tamping the grind remains of capital importance.
For the grind to be distributed homogeneously, the tamper is essential to perform this operation.
Tamping is considered successful when there are no gaps left in the grind (gap through which water would flow too quickly, a phenomenon called channeling in English).
