This coffee bean comes from the Sato of Kerala, on the south coast of India, and constitutes the best quality of monsoon coffee. It owes its name to the fact that after harvest, the green beans are exposed to monsoon winds in open warehouses for a few weeks during the rainy season. This process attenuates acidity and intensifies sweetness by giving it a straw yellow hue.
