Dive into the world of green coffee from the Karnataka region in India,a blend of several Arabica varieties (Catuai, Cauvery and SL9), grown at an altitude of 1500 meters. These beans undergo selective hand-picking, before being subjected to monsoon treatment.
The origins of monsooned coffeeare linked to a particular anecdote: shipments of Indian coffee, in transit to Europe via the Cape of Good Hope, wereexposed to heavy humidity and monsoon salt windsduring the journey. These conditionsresulted in a low-acid coffee with woody aromas, notably of wild herbs.
Today, the coffee undergoes the same treatment. It is spread in open warehouses for 4 to 5 days, then stored in bags, arranged with space between them to allow the monsoon to act on the coffee. After several weeks, the coffee changes color, adopting a yellow hue, a sign of the "monsooned" process.
Each bag of green coffee contains precise information such as density, moisture content, etc.
