What is a Turkish coffee maker?

The Turkish coffee maker, also called Cezve, is used to prepare Turkish coffee (also known as oriental coffee). It is one of the oldest coffee extraction techniques.

Unlike most other methods based on infusion, the Turkish coffee maker uses the decoction process. The finely ground coffee (consistency close to flour) dissolves in boiling water with sugar (and spices according to recipes).

What are the steps to use the 4-cup Turkish coffee maker?

1. Pour 4 cups of water into the pot
2. Add 4 heaped teaspoons of ground coffee (very finely)
3. Add 4 teaspoons of powdered sugar
4. Place the Cezve on the heat source
5. Stir gently
6. A foam will appear
7. When the coffee starts to boil, remove the pot from the heat and distribute the foam into the cups, then return the pot to the heat until a new cream forms.
8. Repeat this process until the cups are completely filled (which will limit the presence of ground coffee residue in the cups).
9. Let the coffee rest for about 1 minute before enjoying it :)

During the initial preparation phase, you can also add spices, cardamom, or orange blossom in addition to the sugar.
