Terra Etica has chosen a coffee grown on the lands of Marcala, within the COMSA cooperative. Grown at an altitude of 1000 to 1500 meters, this Arabica benefits from organic and fair trade certifications. Full-bodied and rich, it reveals aromas of roasted almonds and dark chocolate, ideal for filter tasting during lunch, thanks to its medium roast done in France.
The coffee growers of Marcala, heirs of the Lenca people, preserve traditional farming practices despite the disappearance of their language. The COMSA cooperative is a model in organic production, influencing organic coffee culture on a national scale. Located at 1300 to 1500 meters altitude, Marcala has overcome the Coffee Rust crisis (2012-2013) by cultivating more resistant varieties, such as Typica.
Today, thanks to their expertise, Marcala produces an exceptional coffee protected by a PDO, adopting organic and biodynamic practices. COMSA continues to innovate, sharing its knowledge through its La Fortaleza center, where training in composting and natural fertilization is provided to producers. With the support of 25 agronomists, the cooperative constantly improves its yields and bean quality, surpassing national standards.
