What is a Turkish coffee maker?
The Turkish coffee maker, also called Cezve, is used to prepare Turkish coffee (also known as oriental coffee). It is one of the oldest methods of coffee extraction.
Unlike most other techniques that rely on infusion, the Turkish coffee maker uses decoction. The very finely ground coffee (flour-like consistency) dissolves in water brought to a boil with sugar (and spices according to recipes).
How to use the 10-cup Turkish coffee maker?
- Pour 10 cups of water into the Ilsa coffee maker
- Add 10 well-filled teaspoons of ground coffee (very finely)
- Add 10 teaspoons of powdered sugar
- Place the Cezve on the heat source
- Stir gently
- A foam will appear
- As soon as it boils, remove the coffee maker from the heat and distribute the foam into the cups, then put the coffee maker back on the heat until a new cream forms.
- Repeat until your cups are full (this will avoid excessive presence of coffee grounds).
- Let the coffee rest for about 1 minute before tasting :)
At the beginning of the preparation, you can also add spices, cardamom or orange blossom in addition to the sugar.
